La presente investigación se realizó en la finca San Agustín Ixtacapa, municipio de San Antonio, departamento de Suchitepéquez, Guatemala, con el propósito de evaluar la influencia del proceso de fermentación sobre la calidad de almendras de cacao. La metodología consistió en comparar los métodos de fermentación en cajas y Rohan, utilizando cacao tipo A (amelonado) y tipo B (angoleta) durante distintos períodos, mediante análisis físicos, químicos y de regresión. Los resultados evidenciaron que la calidad final dependió significativamente del tiempo, método y tipo de cacao; el método de cajas mostró mejores respuestas a seis días, mientras Rohan alcanzó óptimos cercanos a nueve días de fermentación. |
