| Summary, etc | La presente investigación se realizó en Guatemala, con el objetivo de caracterizar física, química y nutricionalmente cinco variedades de frijol común negro (Phaseolus vulgaris) recomendadas por el Instituto de Ciencia y Tecnología Agrícolas (ICTA). Se empleó un diseño experimental completamente al azar, efectuando análisis físicos de peso y tamaño de grano, determinaciones químicas proximales para cuantificar proteína, fibra, grasa y cenizas, así como análisis nutricionales de contenido mineral y energético mediante métodos estandarizados de laboratorio. Los resultados evidenciaron variaciones significativas entre variedades en composición proximal, contenido proteico y concentración de minerales, además de diferencias en características físicas del grano relacionadas con calidad comercial. |
