La presente investigación se realizó en el municipio de San Juan Sanarate, departamento de El Progreso, con el objetivo de diagnosticar la producción e industrialización de yuca (Manihot sp. L.). Se aplicó una metodología descriptiva que incluyó encuestas a productores y agroindustriales, entrevistas estructuradas, visitas de campo y recopilación de información sobre áreas cultivadas, rendimientos, procesos de transformación y canales de comercialización. Los datos se analizaron mediante estadísticas descriptivas. Los resultados evidenciaron variabilidad en productividad, limitaciones tecnológicas en el procesamiento y predominio de comercialización en mercados locales y regionales. |
