La presente investigación se realizó en el municipio de Santiago Sacatepéquez, departamento de Sacatepéquez, con el objetivo de comparar diferentes variedades de zanahoria (Daucus carota) para su utilización en la industria del deshidratado y consumo en estado fresco. Se estableció un ensayo de campo bajo un diseño de bloques al azar con cuatro repeticiones y nueve variedades como tratamientos. Se evaluó el rendimiento de campo, contenido de materia seca y características organolépticas mediante análisis de laboratorio. Los resultados evidenciaron diferencias significativas en rendimiento y materia seca, sin variación en color, sabor y olor. La variedad Nantes Strong Top presentó el mayor rendimiento de campo, mientras que Emperador registró el mayor contenido de materia seca. |
