La presente investigación se realizó en el valle de Olintepeque, departamento de Quetzaltenango, con el objetivo de evaluar un sistema rústico para desecar manzana (Malus communis) mediante el uso de energía solar. La metodología utilizada consistió en el diseño e instalación de un deshidratador artesanal, pruebas de secado con rodajas de fruta bajo condiciones ambientales locales y mediciones periódicas de temperatura, tiempo de desecación, reducción de humedad y calidad final del producto. Los resultados evidenciaron que el sistema permitió disminuir significativamente el contenido de humedad, conservando características aceptables de color, textura y sabor, con operación económica y funcionalidad técnica adecuada. |
