La presente investigación se realizó en El Canton San Pedro, del Municipio de San Pedro Jocopilas del Departamento de Quiché, con el grupo de mujeres del cantón de San Pedro, se procedió a desarrollar el experimento sobre el hongo comestible Pleurotus Ostreatus, el cual tiene la particularidad de ser conocido en la región y tener un fácil manejo para su producción. En el experimento se evaluaron cuatro sustratos para la producción: olote, vaina de frijol, doblador o tusa y hoja de roble. Dentro de los resultados, el olote fue con el que se obtuvo mejor resultado, (olote: 8.08 kg, vaina de frijol 6.86 kg, tusa o doblador: 5.41 kg y hoja de roble 4.82 kg, respectivamente) con un rendimiento significativo en comparación con los otros sustratos. Además de la experimentación de sustratos, se enseñó al grupo organizado la forma de preparación y empacado de los cuerpos fructíferos para la comercialización, dando realce a la organización social como complemento para garantizar la seguridad alimentaria, especialmente a través del rol de la mujer, el cual es de vital importancia en la gestión del beneficio social y comunitario.
